processhead Pheasant was wonderful! Some of the moistest pheasant I have ever cooked. We injected with cajun soluble seasoning, then we rubbed the meat under the skin with cajun rub and then we sprayed the outside with duck fat and then put on more cajun seasoning and then smoked for 4 hours at 230 and it came out awesome!

Well you get xxtra credit for plucking that pheasant so you had some skin to work with. I just never had the skill or patience to pick a wild bird.
With all those extra goodies you applied and injected, it had to be a treat. -
gChart the rare downvote! Ugh, I need to shower now, god I hate that term!

calldoctoday once I went to kegging I have never looked back. I still bottle occasionally to give away fill a growler to bring along. No capping and cleaning dozens of bottles
YooperDog I definitely think you are on to something there!

Made a crockpot full of wild boar chili - no beans

I always heard real chili doesn’t have beans. Let the debate begin…
processhead Well, I know the great folks down in Texas have got to have no beans in the chili. I have done them both ways & the chili was great, but honestly, I feel like something is missing if I don’t have some perfect Pinto, Mayacoba, & Kidney beans in my Dave’s Damned Good Chili.

Smoking a turkey meatloaf. The wife’s favorite. Happy wife, happy life. Someday maybe I can figure out how to attach a picture on here.
GWG8541 There are two ways to win an argument with your wife… Neither one works

processhead That decision of beans/no beans is a cuisine style decision. If it was a Texas style, no beans. If it was a East North Central and some Southern, you have beans and really go out there with having it with spaghetti. But, the International Chili Society says it’s sacrilegious to have beans or pasta. Whatever your choice, just make it taste goooooood.

JoeB How true. The only thing I found that works is “yes dear, I was wrong, may I bring you more chocolate please”.

GWG8541 That really looks good. You did a great job. I’m not showing you pic to my wife
I don’t want her to know what good looks like

Looks good. Is that an Oriental style salad?
-
YooperDog No, it’s some type of chopped Mediterranean salad the wife likes. I’m not sure of the brand, but its a bagged kit salad she picks up at Sam’s or Costco. Its pretty tasty.

Tex77 Inspired Potato Soup. This stuff works wonders for those cold damp nights like we are all getting somewhere right now. Thanks to Tex I was inspired to mess around with my old potato soup recipe. This is NOT MY MOM’S POTATO SOUP. Used Apple Chicken Bratwurst seared, sliced, & quartered in the soup & it is really good. Thanks Tex, I really appreciate it! -
This is what happens when you make a huge pot of Dave’s Damned Good Chili. You need to add a little spice to your life, so you turn some of it into a nice warm batch of Chili Cheese Enchiladas with some good Cerveza to wash it down with!

Well, not sure what happened there, but here it is. -
My son calls this Downhome Good Southern Cooking. Fresh cutup chicken, marinated overnight in spicy buttermilk marinade, then you have got try that Walton’s Chicken on the Run breading. Deep fried in peanut oil in a cast iron pot. Of course you have to follow it up with some of those lip sticking mashed taters & my Miracle Biscuits with real butter. Hmm, Hmm. What’s for dinner Uncle Crock? -

This is what you want when the weather gets a little warmer, maybe like when we got that Strange Balmy weather down here for several days about a month ago. That is when you season some of these nice on sale for $4.99 a pound Winn Dixie Beef T-Bones with Walton’s Roast & Steak seasoning, Add a little very coarse sea salt & very coarse pepper to it. Let it sit on the racks about an hour, then put it in the smoker with good bit of Mesquite for about an hour, Give or Take. Then sear it for about a minute on each side & I gotta pinch myself & make sure I haven’t died & gone the heaven. Oh Man, that’s good!
