I have a bunch (like 30lbs) of precooked, deboned chicken. How about some suggestions?

spanky32354 Food process some of it and mix it hot buffalo sauce and then spread cream cheese on the bottom of a pan and put the mixture on top and then put cheese on the top of that.

Shredded is great but you generally need to cook it at a higher temperature like you would pork to do that. You could put it through a food processor and get a similar result though if it was just cooked to 165. I like to use it with salsa and cheese and chips for a taco chicken salad or just cheese and salsa is good too!

A boudin style sausage would be an excellent choice to use up a bunch of pre-cooked meat!

spanky32354 Like Joe Hell said you would want to select something that is generally done with pre-cooked food Boudin being the most popular. If you want to make a real boudin you will want to get your hands on some liver as well, since you are using chicken already I would go with chicken liver vs pork liver.

Along the lines of the boudin you could also make a chicken and wild rice with mushroom casserole and stuff that into a casing.
