If you want to make a real boudin you will want to get your hands on some liver as well, since you are using chicken already I would go with chicken liver vs pork liver.</p>

<p dir="auto">Shredded is great but you generally need to cook it at a higher temperature like you would pork to do that.  You could put it through a food processor and get a similar result though if it was just cooked to 165.  I like to use it with salsa and cheese and chips for a taco chicken salad or just cheese and salsa is good too!</p>
