    So I ground lots of elk this past season and we made our burger at 80/20 …can I use this 80/20 as is for snack stix or should I add more fat???thanks for any help…

      I would add more fat, 80/20 will be dry in my opinion. Less than 70/30 to me feels like sawdust in my mouth.

        I make a my venison snack sticks mixed 80/20 and we are very happy with them. I probably would not make them any leaner than that.

          Buckmaster 1st, I love your avatar, second what fat is the 20? If it is pork you should be good, personally I like 25% but 20% will work just fine. I would recommend |Sure-Gel-Meat-Binder

            Buckmaster I have made snack sticks from 80/20 ground beef and they turned out ok.

              Jonathon ,thank you sir I used pork for the fat and just ordered willies seasoning, casings and hot cheese high temp …let you all know how they turn out…thanks to all of you who replied …
