    Making more room in the freezer. Pulled out a butt and got a couple of jowls from my favorite processor. Used EQ method on all. Buckboard bacon and jowls were coated in medium grind black pepper and a lighter coating of red pepper flakes and smoked with apple. What’s not to love?

      gus4416 PapaSop I still have a handful of bellies in the freezer, but I think I am going to go this route for awhile to prolong my belly stash. Both turned out great and take care of the Bacon urge. My wife actually likes the buckboard bacon better, I lean towards the jowls. Go figure.

              YooperDog that looks great. I’d like to try that buckboard bacon myself now, as everytime I see a pork belly it is like $7.50 /lb.

                    ND Mike You can do it. Buckboard bacon is probably one of the easiest, & unfortunately that & Canadian is about all I can do because I can never find any bellies, much less bellies at a good price.

                      1/2 purple onion chopped
                      1lb cheddar cheese shredded
                      9 oz chili cheese fritos
                      1/2 cup mayo
                      To keep the corn chips crispy you may want to add them in right before serving.

                                    I did a simple salt, sugar and peppercorn brine for the rack of pork I am cooking later today.

                                        Spent all day yesterday doing brisket, nice part of it going in the smoker is set it and forget it for most of the day. Put it on at 5:00 am and took it off about 16 hours later, then in the cooler for an hour. Sliced it up today and enjoyed some and vacuum sealed the rest to enjoy later for quick meal.
