          Tex_77 I just cooked 3 lbs of bacon to the 3/4 mark. They are ready to be used/finished for many applications when I get visitors arriving next week. Your bacon looks wonderful.

            Made the wife some beef pineapple snack sticks. She like some that we buy when we go down to the ocean but wasn’t happy with the ones we bought he a couple of weeks ago. I told her I could make them, so I did. Used ground beef 80/20, Landjaeger seasoning, a 20 ounces can of pineapple and the juice and brown and maple sugar, along with some sure gel and sure cure and hickory smoke powder. Processed them in the convention oven at 190 degrees while I put 21 lbs. of pork butt through the grinder so that I can make up some Landjaegers, Supreme pizza and Jerry’s brats and a couple batches of maple breakfast sausageIMG_0402.JPG

              YooperDog Ah, I remember those! In fact, the radler is making a showing here now, I saw Grapefruit radler by TWO brewers at regular old Safeway recently! I bought both 6 packs because I like that red grapefruit carbonated water, and my wife likes shandy. They were pretty good!
              processhead I always liked altbier, seem to recall it was mostly around Koln, maybe Koblenz? Either that or up near Dusseldorf I also went a lot.
              Can’t recall for sure. But I did see them put various syrup like raspberry in beer, thiugh never tried myself. However, I am all in favor of beer experiments! 😉

              Dave in AZ processhead there were a few places that I recall put flavors in their beers, my son liked one with banana flavoring.

                  Tex_77 lol. I was just cooking outside and I didn’t want tobunpack my big Camp Chef 3 burner for what I was doing. I have lots of Coleman stuff. Some of it really old.

                            glen She likes it, as well as me. I worked for Dole when I was in High School in Hawaii, you would think I would be tired of it. It’s actually rally good for gut health. The pineapple flavor is very mild with just 20 ounces in 5lbs. of meat with all the other seasonings on top of it.

                                      johnsbrewhouse those sound great, and thanks for your recipe! I never would have thought of pineapple meat sticks, but it keeps growing on me. I saw your comment about your wife asking for more pineapple flavor. And also a guy was asking about ECA use and flavor in snack sticks. It got me thinking about recipes where ECA would go well. What do you think some ECA would do to your pineapple flavor, would that help enhance it or mess it up, do you think?

                                        Dave in AZ I personally don’t use ECA since I don’t care for it much. You are going to get some acid from the pineapple anyway and the wife probably would not enjoy it as much. My believe is is you want sour tangy meat, you need to let if ferment and sour itself through beneficial bacteria’s. That’s my take, it’s just a personal preference.
