Starbucks egg bites

I saw these egg bites at Starbucks. 2/$5. Crazy. So I thought I would make my own. My flavors are : smoked breakfast sausage with gruyere cheese. Green onion and toasted red pepper flakes.
Came out incredible.

Look great. They sort of remind me of Scottish Eggs.

Back when the wife and I were both having to commute into work, I used to make those in muffin pans. Also another fun one to make in a muffin pan is mini meat loafs.

lkrfletcher nice! My wife loves those and makes them in our instant pot too. That silicone mold is pretty neat. Yours look good. Calling them “egg bites” instead of crustless quiche was marketing genuis, lol!

Brianzipperdog123 she just uses the one in the Instantpot manual that came with it I think. Myself, I would just use a quiche blend, so like 4 eggs to 1/2c cream or halfNhalf. Bit of nutmeg, half t salt, half t pepper, half c shredded cheese or parmesan. Maybe half c sauteed onions. I like quiche lorraine, so I use leeks and cooked bacon.
All those amounts can be varied without issue, so long as you don’t exceed 4 large egg to 1 c milk/cream ratio to make sure it sets nice. Since its just a binder matrix around everything else, you could put 2c of add ins like onion and bacon in if desired, but I like it a bit more egg than stuff.
