Copper Penny Salad

    2# of carrots peeled and sliced
    One white onion cut into strands
    1 green pepper

    Dressing
    1 can tomato soup
    2/3 cup sugar
    2/3 cup vegetable oil
    2/3 cup white vinegar
    1 tsp salt
    1 tsp dry mustard
    Pepper to taste.
    Cook the carrots until al dente. I like just a little crunch left in them.
    Whisk the dressing ingredients together and pour over the vegetables. Chill for 4 hours for best flavor.

            crosscountry106 It’s at the bottom of the recipe under Dressing. He probably should have underlined it. I did the same thing. Then, reread it and then it made sense.
