I chose 2nd because the 1st is fairly obviously Kansas, where all the REAL meat processors live!
Jonathon My first inclination is Texas or maybe even New York, But after I think about it for a while (maybe that is going to be the problem), then I wonder if perhaps a state like Illinois will provide you the most non commercial retail for this sort of endeavor.
