First ever goof up making sticks

twilliams When I have screwed up and overcooked sticks you can see empty spaces in the meat where the fat used to be and has rendered out. I still see good fat particle definition on yours. I bet they will still eat very well.

samspade they are packaged and won’t look back. Just a mistake and lesson learned I hope I don’t make again. No one will know the difference.

They look great and glad you decided to package and not look back. Hopefully you won’t turn OCD like me. I put redundant probes and have multiple timers ROFL!

Jamieson22 unfortunately I did not take photos of the first batch. They were not as snappy as my others but not terrible or mushy by any means

twilliams I just want to see (& taste) some of your good ones, because as good as your bad ones look, I cannot even imagine how good the good ones look.
