calldoctoday so true. Fuel cost in general is very high. I can’t believe just what people want for a cord of wood, a tank of propane, or our electricity cost.
Anyone doing this for some resale must take these cost into account. Those doing it for them self may need to evaluate the cost effectiveness of their product.
For example, I use to make my own bacon. Now, I use about75 pounds a month with catering. My cost on pork bellies, fuel, curing, etc., I am much better off getting a prime product than making my own.
I know using this commercially is different, but for those doing their own cures for economic reasons, we must look at the total cost to produce it.
There are factors that quality trumps this model. I know that my sausage will beat any commercial sausage. So, I make my own. Bacon, Mine is good, but commercial is about the same quality and much less expensive.
Chef What are they getting for a real cord of good wood these days? I used to split a lot & sold a little to friends & family too, if they asked. I still just like splitting wood (reminds me of another story, that I will save for later), but other than for smoking & cooking, it just doesn’t do anything for us to fire up the fireplace in this house. We used to put nice wood burning stoves in the homes I built for us & those were for real. I still split my Pecan & Oak for smoking. We don’t have any Hickory trees, Black Walnut, or Sassafras on this property. We do have a couple small fruit trees, but you really do not have to split that for smoking. I also found that Dogwood is similar to Oak, so we lost the biggest Dogwood I had ever seen (& I used to literally propagate them) a few years back & I cut that up & split it for smoking. We have lots of Cherry Laurel here that looks good & smells like Cherry Coke when you cut it. However, I would not smoke with it as it has too much cyanide in it as I understand it.

Chef My God, I don’t know what to say. Yes, I agree on the Mesquite. Excellent & very hot for grilling or making your own charcoal, just a little tiny bit for smoking beef.

The price of propane has been inflated just like lumber, they tried to use the excuse of the freeze last winter down south for the shortage. It’s greed and profit taking rather than shortage. The propane companies will end up taking it in the shorts just like the lumber manufacturers are now with too much inventory. Just an example OSB was going for $65-75 a sheet in June and 2 weeks ago I could buy it for $14 a sheet.

Heck, I think $14 is on the high side because I remember when it was about $4.00 & then I think it was some hurricane, not Andrew, another one a few years before him & they said they had to raise it to $7.00, but it would go back down right away. Don’t hold your breath. Then it went up to over $9.00 as I seem to recall after Andrew hit. Still not holding my breath or I’m a gonner.

I use an electric smoker a MB 30 I like the digital control but not real happy with it as I am replacing the control board for the second time

I am glad we paid the extra $150 to have natural gas plumed to the back of the house for a natural gas grill. We have been here 6 years and I just recently replaced a bottle of propane that I use for the pear burner and frying. I know natural gas just now crept above $5mcf but super happy I don’t have to mess with propane bottles anymore. I know for some it’s just not possible to get natural gas to their home which I think sucks.

HerbcoFood That’s out problem, we have a major natural gas line (North-South) just a half mile from the house, yet the utility won’t bring gas to the neighborhood, just like the cable company. Being semi-rural and in a built out community of 47 homes, they don’t want to spend any money.

johnsbrewhouse Yeah that is what sucks, even for my neighborhood I live in, parts have better fiber optics than other parts. I live in a master planed subdivision so that is even more of a head scratcher.

Then, when I called them up to connect, they would not because of the railroad tracks. Coaxial internet did the same. So, I understand. When we were in Texas at our last house I could afford to bring it in for us & the few neighbors we had to help them too. Can’t do that any more these days. Miss that natural gas. Coaxial cable I could just about care less about, but it would be nice to make trying to make a dollar a little faster.

I can’t say anymore, my daughter, granddaughter and son-in-law will probably be staying with us for several months while they build their new house and sell their old. We will build something more to what we want without covenants and an HOA.

johnsbrewhouse Wishing the very best. That is just about the way I feel too, but Margaret says no more house building & the house itself is not too bad, good bones, pretty good layout for something I did not design (just kidding). I would not mind being a little further out or at least more secluded. I learned a long, long, long time ago to stay away from those HOAs. I will not live in one period, now. First experience with one was about 40 years ago & I was excited about it & wanted to do good things & help. That is not what everyone one else involved in them wants & most of it borders on ridiculousness, in my humble opinion. The we did one that had one, but they assured us, it exists, but no one pays & everybody just works together. It was very private & secluded. Then after several years of being there & volunteering time & tractor work, etc. to help keep things up & do the right thing, someone got the wise idea & found he could legally do so, to revamp it & collect back dues from folks from years of not paying. You can just imagine. Well, I learned my lesson twice, that’s it, No More! Please pardon my rant, but I am passionate about it.

holysmoke if you were closer I might think about it. I’m sure shipping would be too much and I would be better off buying new.
I just got hosed on a used one I found on ebay. Used buy it now and then find out he doesn’t have it. Now I have to wait and see how long it takes to get my money back. It was only a few months old and used 4 times for $1300.
I just found a lead on another used one only a few months old. Waiting to hear back from the guy on pricing.
