kyle Like that smoker. Much more reasonable in size for the group you are serving than what I have. I often think I need to get rid of my present smoker and get something smaller. Hard to justify heating the beast I have for a couple slabs of ribs or a few pork butts.

Chef just made my own. Salt, pepper, granulated garlic, granulated onion on the pork, brined the birds in salt water, bay leaves, garlic cloves.

Chef it was a AWESOME day. Nice weather, a round 150 guest. Never ran out of food, but not a lot left. He graduated from high school. Going to UWS in superior this fall for psychology. He wants to work with kids. My aunt took pics but I dont know how many of the food. It’s been a long 2 days, but well worth it. Thanks for your advice and all my meatgistics friends.

Again thanks to all of you for the input, advice, and good lucks. When I got compliments on the meat, I gave all of you guys credit for the help. I have a feeling our number in the meatgistics community is going to grow. On behalf of my wife and son, thank youFB_IMG_1624805844270.jpg
