    Sort of. I take what’s leftover from the stuffer, form into a log and smoke. Slices just like summer sausage.

      Absolutely. Without the casing it gets a little dryer on the outside. Actually a nice little chewy rind on the outside. Have plans to do a Willie’s summer sausage just haven’t got to it. The pepper cheese will go in along with some mustard seed. Tried the ghost pepper… no thanks. No sweating unless I’m golfing 🤣

        PapaSop hahaha! I hear ya on the ghost pepper cheese. I bought some at a local meat market and it was hot! It makes my wife hiccup!!!

          PapaSop i do know how to select a thumb vote but i cant do both. Wanted to give a thumbs up for saying Bourbon Peppercorn is great, thumbs down because you said Willies is still your #1…lol. All in fun ofcourse

              twilliams The ranch is a great stick but I feel like it is misnamed, agree or disagree? It should be called something like mild classic or something because I pick up no ranch taste. I’ve even added a decent amount of the dry ranch salad seasoning and it doesn’t really kick up the ranch flavor in my mind BUT the taste is so subjective so I am wanting your opinion. Well, actually I always want everyone’s opinion…okay, this is getting a little rambly!

                Jonathon I pick up a very slight, and I mean very slight taste of ranch at the beginning but not all the way through the entire stick. Same with fajita, not much fajita flavor to it. But good flavor all around

                    Has anyone had the hot pickles from Porubsky’s in Topeka? I am really wanting to try and dry some and add to a snack stick.

                      Grimpuppy My recommendation when adding anything that has been pickled is to cut them up and lay them out on a rack for a few hours to let the vinegar evaporate off of the outside at least. Vinegar can denature your proteins and harm your emulsion/bond. I’ve added pickled jalapenos before with this method and was happy with the results.

                        Jonathan you think putting them on screens in the smoker at like 130 degrees for 3-4 hours would be worth it?

                            Can anybody tell me the difference between the Willies (no MSG) and the Willies with the MSG flavor-wise?
                            I bought and really like the non MSG unit. Was just curious the taste difference. From the amount of reviews,
                            Non MSG seems the way to go.

                              Gravity Storm if i remember correctly the MSG is only sold in 100lb batches, primarily for commercial uses. And although i have never used it i believe MSG does give a slight better taste. However, some have allergic reactions to MSG
