    PapaSop Can you give a review of the bourbon peppercorn flavor? You and twilliams both seem to like it and it has me thinking maybe I need to try it again?

      Just getting into Snack Stick, so this was a timely post - Thank you! Based on the feedback, I placed an order for some Bourbon Peppercorn and Willies. Can’t wait.

        The bourbon peppercorn is quite tasty. There is a flavor profile there that I’m not picking up on (old taste buds ). Will keep sampling. It’s also the only one of the three I’ll have around for personal use. The maple bacon is to sweet for me and the taco is just that, taco.

        As I said the kids will love these. I’ll still take the Willie’s as #1.

          Had to do a few logs after the sticks. Came out pretty well. Yeah, I know. No cheese. The boys didn’t want it this time. Not sure they’re my children anymore. 🤣

            Jonathon i can understand why you like the Willies so much. It has really good flavor with a good back end heat. And like i said i notice you like heat in alot of your sticks and jerky. Like Habanero BBQ, Gigiwatt and ghost pepper cheese. I have grown out of the hotness thats why i prefer to have the Bourbon Peppercorn, Ranch and fajita. I do love growing peppers though just to give away as i grow the hottest peppers in the WORLD!! Its really fascinating to me. Id really like to make a snack stick with Carolina Reaper in it, i just have a hard time using my meat for that as i will only give it away to mostly hispanics i know that love the heat.

                PapaSop awesome summer batch!! Great job, i got some cheese that i will be throwing in my next batch of a sample flavor, i cant wait!! Its not gonna be your typical high temp cheese, wonder if you can figure out what its gonna be since your from Wisco

                    Sort of. I take what’s leftover from the stuffer, form into a log and smoke. Slices just like summer sausage.

                          Absolutely. Without the casing it gets a little dryer on the outside. Actually a nice little chewy rind on the outside. Have plans to do a Willie’s summer sausage just haven’t got to it. The pepper cheese will go in along with some mustard seed. Tried the ghost pepper… no thanks. No sweating unless I’m golfing 🤣

                            PapaSop hahaha! I hear ya on the ghost pepper cheese. I bought some at a local meat market and it was hot! It makes my wife hiccup!!!

                              PapaSop i do know how to select a thumb vote but i cant do both. Wanted to give a thumbs up for saying Bourbon Peppercorn is great, thumbs down because you said Willies is still your #1…lol. All in fun ofcourse

It should be called something like mild classic or something because I pick up no ranch taste. I’ve even added a decent amount of the dry ranch salad seasoning and it doesn’t really kick up the ranch flavor in my mind BUT the taste is so subjective so I am wanting your opinion. Well, actually I always want everyone’s opinion…okay, this is getting a little rambly!

                                    Jonathon I pick up a very slight, and I mean very slight taste of ranch at the beginning but not all the way through the entire stick. Same with fajita, not much fajita flavor to it. But good flavor all around

                                          Grimpuppy My recommendation when adding anything that has been pickled is to cut them up and lay them out on a rack for a few hours to let the vinegar evaporate off of the outside at least. Vinegar can denature your proteins and harm your emulsion/bond. I’ve added pickled jalapenos before with this method and was happy with the results.
