    I made 25 lbs of jalapeño snack sticks, and stuffed them all at once with all the seasoning, sure cure, encapsulated citric etc. I forgot about that I could only smoke 12 lbs at once, so I put the remaining stuffed snack sticks in the refrigerator til the next day. I noticed that you are not suppose to hold the sticks overnight with the encapsulated citric as it acts as a accelerant to the nitrate. Are they going to be safe to eat?

      ECA melts at 135F you should be fine I have done the same thing a few times
      As far as safe, even if they should somehow dissolve the meat would still be safe, just discolored grey

          I used to laugh at Austin when he’d tell me eventually I wouldn’t need to respond to most posts as other people would know enough. Then it happened and I was sort of sad for a bit but I’ve come to be proud of the fact that so many Meatgistics users know so much!
