    Yes, you must make it. You must make both of them. I understand though, as the years have gone by, I seem to make it less than before, but at least once.

      Tex, tried your Maple this morning & it beats Cinnamon hands down. Use Maple Extract instead of Lemon & Vanilla on the icing. Only thing I can think of that I messed up is I should have used the maple with butter & sugar for the filling too vs the cinnamon, Cinnamon Extract, & sugar. That would have been some pretty intense Maple. Just in the icing though it was great!. Maybe I should have smoked em with Maple Wood!

          If you can get your hands on some maple sugar you might be able to reduce the sugar and replace the cinnamon. It is a bit pricey though.

            Just getting to pull out a cheesy scalloped potatoes and ham casserole. Cured and smoked my first full ham for Easter, need to use up some of that meat.

Canned up some more fresh asparagus & made up a gallon of home fries to freeze. Smoking some burgers & onions & Baked Beans to go with them right now. Will fry up the fries that did not fit into the bag in a bit for the burgers.
              I would really like to get my hands on some genuine Maple Sugar. Probably have to do something on line I suppose to find it around here. I could see using that on more than Cinnamon Rolls too.

                  calldoctoday Google search it, you can find maple sugar quite a few places on the net. Amazon sells it too. Depending on how much you want. Just watch the prices and check the ratings to what you are getting.

                        Tex_77 Tex,
                        It’s pretty simple. Peel some russet potatoes. Cut them lengthwise apx. 1/2" wide. Soak them in ice cold water (cold water with ice cubes) for a little while. The water will turn cloudy. That is all the starch & you want to get that out of there to make em crispy. Rinse & soak in some more ice cold water. If the water is now clear, you are good. If the water is still a little cloudy, rinse em again in ice cold water (icy cold is the trick). Dry them either with sack clothes or naturally. Deep fry them up in a cast iron pot (Dutch oven) of fresh peanut oil until they are golden brown. Salt with sea salt over an expanded metal or screen drain. Watch em go, but don’t blink or you will not get to see them.
                        Oh, what you don’t fry you can freeze up in freezer bags. Just try to get all the air out as much as you can. Then you are ready for another batch without all the work. Cost to make a whole lot of them using 10 pounds of potatoes is $1.98 when the potatoes are on sale. They just seem to taste better!

                          Smoked Chicken wings & quarters coming down today with a big pot of butter beans (Jackson wonders, the big ones) dried from last year’s garden. No such for this year as I was not too smart & decided to let the garden go fallow before the corona business hit. Oh, Persimmon bread for desert from some of last year’s persimmons pureed. For some odd reason we got no persimmons this winter, weird.

                                Tex_77 You All are driving me wild tonight! Shoulda had some of those home fries & corn dodgers to go with them fish, though! It looks real good.
                                I don’t know if I can wait for them smoked wings & quarters though now looking at all this!

                                        Tex_77 Are those the product of your fishing outing? You can’t find good fresh catfish this far north. Looks like you need a glass of cold tea. Looking forward to my next trip to the South, until then your picture will have to suffice.

                                          YooperDog The mushrooms were fantastic! I’ve had dried lions mane but never fresh. A local grower will bring a selection of oyster mushrooms and now the lions mane to the meat shop and we trade goods. It works out well for both parties!
