PJohn I highly recommend the #32. Since acquiring this grinder at the shop we have stopped using our $6k #32 Thunderbird. It can rip through enough meat to keep up with our production needs and trim accumulation as we process. The grinder is super quiet and easy to clean. The hopper can easily hold 10 lbs of meat at a time. Second only to our chambered vacuum sealer, it’s our shop MVP of tools.

Joe Hell what’s the capacity on the Thunderbird? I have been tossing around buying a grinder/mixer for years. We have a old #32 butcher boy we use. Probably run 300-400# a day threw it.

Derek_D I’m not sure the official capacity but it seems like I can get around 100 lbs in at a time. There was a learning curve getting used to it but we have it down pretty well now though it can be a little messy…nothing that a strategically placed meat lug can’t take of. It’s more grinder/mixer than we currently have a use for and are considering selling. We haven’t fired it up for about 6 weeks now.

PJohn my next purchase is also going to be a grinder. I’m looking at the Pro-Cut #12. Was thinking about holding out for Weston Pro #22 but the video Jonathon did gives me confidence the #12 will do what I need for recreational/small catering needs.

            I ain’t scared.

Tex_77 Thanks. I normally do a 25# batch at a time and been using a Gourmia 800W grinder. At this point anything will be a step up.

                I ain’t scared.

Joe Hell Agree the Kitchen aid would be more trouble than its worth. skibumben I am going to hold out for #32 pro. If you get the #12 let me know your pros and cons. Thanks again guys for sharing!

This weekend I had a few people interested in buying some things I make. After considering potential, I know think I’m gonna hold out for #32 Pro if they become avail in next month.

                    I ain’t scared.

PJohn Where did you see that they were back in stock? Might you have been looking at the Pro-Cut grinders? Weston still has not given us a date on the Pro 22 and 32, at least I do not think they have.

One thing to remember is that when you grind 1/8 for the final grind, it does not mater what grinder you have the meat must be very cold or production slows dramatically .

akdave And on smaller ones it can even be really hard with that. Recently I tried stepping down from my 22 to an 8 and was VERY unhappy with how long the second grind on 1/8 plate took and the quality of the meat. I had the meat almost frozen between grinds also.
