      Joe Hell I’ve tried on the veggie sausage because of my wife and the best luck I have had was with the Feta and Spinach Bratwurst with carrot fiber. The base was made out of black and pinto beans along with a few other things that I can’t really remember. I stuffed them into the cellulose casings. In the end I think I liked them more than she did though!

        Jonathon That is essentially my plan too. Beans, mushroom, wheat gluten and sweet onion sausage seasonings to round it out!

          I know I’m not the only one around here that is maintaining a lower carb or keto lifestyle so I figured I start a thread about side dishes. The diet can be challenging so quick and easy recipes with healthy side dishes would be welcome!

          Roasted vegetables are a staple in my house. This time of year squash is on the menu. Drizzle with olive oil along with whole garlic cloves, onions, carrots, etc… It takes about 45 minutes in a 425 degree oven is all it takes. Leftovers are easily made into soup with chicken or veggie stock and a splash of cream.

          Do you have a favorite healthy side dish you want to share? If you have any ideas post them here!

          While I was in Vegas last week I had an amazing meal at Jaleo by José Andrés and was served an appetizer that I immensely enjoyed. It consisted of endive, orange supremes, goat cheese, toasted almond slices and micro greens. It couldn’t be easier to prepare…what you see is what you get!

                        The wife and i just signed on to the YMCA, we will be starting keto this weekend. Not sure how to do this yet. If i lose the belly first then start bulking up for muscle mass oh what. Gonna be interesting, a challenge and lessons

                          twilliams Keto is great for weight loss, it just takes a lot of dedication. The biggest issue for me was that you can’t eat too much protein when going keto. Iif you do then your body betrays you and converts it to carbohydrates (sneaky body) and that meant a huge change in my eating habits. It helped me drop about 20 lb and I have kept about 15 of that off after about a year, so it absolutely can work, good luck!
