New to the sausage making world

I’m Randy from the Butte county area of N. Ca. I’ve been making jerky and smoked salmon for years but thought it would be fun to try my hand at making sausages. I have a Huntrite grinder with stuffing tubes and a Masterbuilt electric smoker. I’ve already made some Italian and breakfast sausages that turned out pretty good. I’ll be doing my first batch of snack sticks with Willie’s seasoning and all the other ingredients I got from Walton’s

Randyman Good choice with the willies, it’s probably the most widely appealing stick seasoning we have and it’s in my top 3 for sure, occasionally my number 1. If you hunt pheasant, it is amazing with pheasant and some cheddar cheese!

Willie’s is good stuff; we use it for regular snack sticks (19 mm casings). If I do jal, cheese or jal/cheese, we go with H Summer Unit in the snack stick casing. For summer sausage, we use the H Summer Unit all the way regardless of the added ingredients (2.4 x 12 mahogany casings).
