@s-a-m Traeger pellets are 100% wood, only food grade soybean oil used process the pellets, not to flavor it, they are made in Oregon. I personally don’t buy their product anymore, because they have gotten way to pricey. I use Bear Mountain made in OR and a new brand Smokehouse that are made in OR as well. Get them at Smart Food Service for 1/3 less than the Traegers.

Mesquite and hickory are 100% wood just not hickory or mesquite, their either Adler or oak with oils. A simple search shows that and most bags of treager pellets aren’t 100% the specie’s llike apple is like 30-40% apple and the rest is oak or Adler , I stick to lumberjack brand.( it’s a free country people can buy what that want) jm2c -
Jonathon Most people I talk to said the overall harvest was down a couple even got skunked and they put the time in. No chronic wasting here yet, in PA so I’m sure it’s headed our way.
Parksider its all a bad deal they were checking this year in Maine with deer and moose .

Parksider This seems to be a renewed response on an old thread but I’d like to hear some updates. Personally…I’d go for a big Hobart even if it’s not the perfect choice for the simple fact that I could make a crazy amount of baked goods.
Joe Hell How big a Hobart Mixer are you looking for?

Here is one getting auction off tonight in Pennsylvania
TomKat1962 Wow… nice mixer… and sold for $452… Now I wonder how much shipping would cost…

craigrice so I’m not familiar but my understanding is you shouldn’t be cutting any bones? Or just the spine? I missed getting a saw so we just debone everything and make jerky/sausage/roasts. What’s health Dept recommending?
Parksider chronic wasting is a deseise that affects wild game and it is working its way all around even here in maine the local DNR wanted the glands to test for it

craigrice I think he was saying that one of the main worries with animals that are possibly infected with CWD is that it is heavily present in the bones and some organs. This http://cwd-info.org/hunting-faq/ has some good information for anyone wanting to read up on it.
And, though this isn’t necessarily the proper place for it but BHA (Back Country Hunters & Anglers) recently had a film event here and for anyone looking to support a good cause check this out https://www.backcountryhunters.org/ they put on a film that was a series of short stories from people like us and some were funny, some were beautiful and some were just downright sad/inspriing.
One was a guy had a daughter with downs syndrome and she wanted to hunt so he set everything up for her and carried her to blinds and made a stand so she could actually pull the trigger…darn it, it is getting dusty in the room right now!
Thank GOD I missed the one about the hunting dog!

22qt two speed mixer I’ve been doing a little work on, hopefully get to try it soon! -
@s-a-m You are going to love that thing and if it doesn’t work it looks like you could take the motor off it and have at least a pretty badass mo-ped?

I have better luck when the meat block is really cold, and check the direction you are mixing. I’m left handed so depending on the hand mixer the paddles might be pushing the meat to the outside?
-
capt jack Dave R has a good recommendation with keeping it cold but, I find that this Plastic Hamburger Paddle is the best mixing assistant possible. I use it to push things off the sides and I use it to transfer into and out of the mixer!

Spray it with food grade silicone before using it…

I use a mixer I made that goes in my cordless drill and a stainless pail that hold about 20 lbs which is the capacity of my natural gas smoker. This works like a charm and you can easily achieve the extraction and dough consistency you desire. I also made an attachment for the drill that turns the handle backwards to open the stuffer for refilling. As an octogenarian I like to have things easy and not have to mix cold meats with my hands or loose time turning the handle

I use Walton’s white oil. When I oil the gasket and gears on my stuffer I just put a little in my 20 lb mixer and rub it all over. Works really well.

I have a 20lb hand mixer and when I’m mixing pork the pork sticks to the sides like crazy. Any suggestions on how to eliminate this problem?
capt jack A little bit of food grade lubricant definitely does help (mineral oil, silicone spray, etc.). Cold meat helps, as does changing the direction you are mixing. I’ve also found that the fuller you get the mixer, the more anything that sticks to the sides gets pulled back in. If nothing else, there’s scraping.
