Were the sausage casings natural or collagen?
A lot of times, high heat will make a casing peel, or over cooking can too. Was your grill really, really hot, and did the casings come off only towards the end of grilling or towards the beginning too?
I just read an article listing the 17 best things to buy on Labor Day weekend; while grills did make the list, charcoal did not. Must have been written by a vegetarian.
I’ve seen that both Lowe’s and HD have the Kingsford twins packs for $9.88, probably other places as well for those of us who like to stock up.
I have been using hi-temp cheese for many years and love it. Try giving it a couple hours of cold smoke and let it set overnight. Then add it to your sausage. Also is great in brats.

I finished my pulled pork yesterday. Turned out delicious! I was happy the Minion method worked. The coals lasted for hours. After my coals died down I ended up burning oak logs for coals.
I’ve had my new OK Joe’s smoker since Father’s day and didn’t know how much of a difference the temp gauge that came with the smoker was off till I picked up a digital grill thermometer yesterday from the West side Walton’s. The digital gauge is reading a steady 225 - 230 degrees vs the smoker thermometer reading 275 degrees!

If you are just using a lighter though, a propane torch is much faster than a standard lighter.

Used the new basket for the first time last weekend. Great tool for the grill. I admit I darkened the onions a little too much but all the other veggies came out great. Used an olive oil spray and seasoned them, per Austin’s suggestion. It’s a keeper. Glad I ordered 2 of them, one for the lake, one for home.
