    Hey Austin,
    I just made some Franks last weekend. Followed your instructions on Walton’s TV. I did use the cellulose casings, love them. Your step by step instructional video was most helpful. I’ve used Walton’s TV several times now and I’m a subscriber on You Tube. Good Stuff! Oh ya… The Franks are out of this world good!

    Sounds like way too much sure cure. Do the math and use a digital scale. Never have gone as low as 1lb batch though. 5lb is the smallest I’ve done

    Hello All,

    I’m planning on using a 50/50 mixture of raw pork and raw turkey in a batch of Pepper Snack Sticks.
    I have this mixture left over from my last batch of egg rolls. Which turned out awesome.
    I’ve never used turkey with the pork. I normally use beef or venison with the pork.
    Has anyone used turkey before? Am I wasting my mixture? Any advise would be much appreciated, kinda worried about the raw turkey getting cured properly. DO NOT want anyone getting sick because of my experimenting.

Love making everything from snack sticks to curing my own bacon. I have a small electric smoker. I have all the other toys like 25lb stuffer, meat slicer, meat mixer, grinder, commercial dehydrator.
Also can’t get enough of Lake Erie, love them walleye.
