    PapaSop I had them spaced fairly good not saying there it wasn’t a few spots touching but for the most part I think I had them spaced pretty good

    Jonathon I will slow my smoke schedule down a little more I thought I had good protein extraction but I can try the sure gel I just bought a pack of that not real familiar with the sure gel

    Parksider No they weren’t close to the chimney and I did do a water bath it’s got to either be a rushed it or wasn’t mixed good enough but I mixed for probably 5 minutes by hand So sticky I couldn’t get it off my hands

    OK so I made some snack sticks with 80/20 ground Chuck I cooked bacon Instead of raw this time and chopped up smaller than bacon bits worked great and mixed in with the meat, High temp cheese and Willie snacks Stick Seasoning. Did the first hour at 140 no smoke then I added the smoke did 150 for an hour then 160 for an hour then 170 and finally 180 but I ended up getting pockets of what looks like cheese but I think it’s fat, Or grease And I mixed It till it was so sticky I could barely get it off my hands and note I also did 10 pounds of deer pork mixture and they turned out fine I’m going to send some pictures if I can figure out how too but looking for some input this is driving me crazy!

    Jonathon yes you are right I was talking about the snack stick Honey barbecue and I was thinking the same thing on the bacon flavor I will just stick with the willies and cook the bacon this time before I mix it I think it should turn out really well I have had a honey barbecue from PS Seasoning which was really good I was just curious on the Excalibur thanks

    OK thanks Jonathan another question I have I was talking earlier about using the bacon in the willies snack sticks Seasoning but now I see there is a bacon flavor Seasoning would that be similar to the willies with a bacon flavor or would it be a complete different flavor has anybody tried this one and I also see there is a honey barbecue is anybody happy with that Seasoning?

    Jonathon for sure and yes I will try cooking the bacon first to illuminate a lot of the grease and then grind it up like I do when I dehydrate my peppers should work really well thanks!!

    Jonathon The bacon was not cooked and no I did not put bacon in the deer sticks I am thinking it is the bacon, I think I will cook it next time crush or grind it into a powder.I will try to get some pictures the flavor is good but it is just a little bit too greasy. The kids love them though LOL!

    Ok so I did some beef snack sticks with ground chuck 80/20 I did 5 lbs and added 1 lb of chopped bacon and hi temp cheese, mixed very good couldn’t hardly get it off my hand it was so sticky, 19 mm casings,started them out at 130 degrees for a hour no smoke then started smoke hr later went to 140 and 10 degrees every hr after till 180 and cooked til internal 160, cold water bath and when I started cutting them up they had a lot of grease pockets I would call it,I also did 50% deer and 50% pork sticks and did the same thing but did not have any problem any answers on why the beef did it is it because I added the bacon?

    Jonathon thanks Jonathan my wife has had some local butcher shop snack sticks and they’re all beef they are a bacon and cheddar so it has the bacon flavor with cheese in it any recommendations on what to use to get the bacon flavor should I just add a pound of bacon with my mix and then add my high temp cheddar cheese with maybe a Willy snack sticks seasoning?

    Want to make some snack sticks with beef anybody got good ideas far as using just hamburger or using roast and grinding it up and what percentage of pork fat are you mix in with beef to make sticks

    OK thanks for the input guys, some guys I work with were talking about they have done that so I thought this would be a good site to ask everybody I have not yet tried it but I do agree there’s plenty of seasonings to probably match the flavor!

    Was just curious if anybody has tried to use barbecue sauce, hot sauce or anything liquid in flavoring snack sticks at all?

    So I got a question I see there is a Willy snack stick sold by PS seasoning can anybody tell me if it’s the same as Excalibar’s and the other question I have is everyone using the MSG or not and I’m sure everybody has a different opinion but I thought I would check in that is the beauty of this community center LOL !
