@dino21 it’s a combination of about 3 recipes I found on line. My best resource has been 2 books by Stanley & Adam Marianski one being “The Greatest Sausage Recipes” I found at Amazon.

@Jonathon it was fantastic! Put a foil pouch with some cherry-apple-maple pellets on the far right burners, 2 on the left side off for indirect cooking. @macsinsac That sounds great. I forgot that I have a bunch of cayenne too! Lately it seems that I can’t get enough heat. Food seems more fun when you work up a sweat! lol

@Jonathon We have close to 80 different offerings, not including what ever sausage I dream up each week. That ought to keep me busy and the diet fresh!

@macsinsac That’s how I normally do it. I have an idea of what I want and I know what goes in it. A descriptive menu item is generally all I need to recreate many dishes!

@chrisndee2 yes I did along with the garlic & 3 hot red peppers from the garden that I added as an afterthought.

@Joe-Hell @KansasDad I wish you the best on your diets. But as for me, I enjoy the whole grain breads, fruits, and the occasional cookie…and lots of beer and protein

@AaronSilves I just saw that the other day! I’ll drive to the Tri-Cities or Pendleton for a good sale at Cash & Carry. I think it’s now called ‘Smart Food Service’ or something like that. There is rumor we might be getting one in Walla Walla. I sure hope so!

@Jonathon LOL! I know!!! The cool thing is that the ingredients (for the most part) are staples in most kitchens. The exception is the Aji Panco peppers called for in many recipes. I’m growing my own this year!

@Jonathon LOL! I can’t say I’ve ever thought about that one! With the right pumpkin grill you could cook for an army and eat part of the grill!

@macsinsac I try to make even portions as often as possible for diet purposes. I’ll use a scale or scoop often. Meatballs and sausages are super easy to keep track of and ration calories that way!

@Jonathon the rub is something I’ve been working on since tasting Pappy’s Santa Maria style rub about 40 years ago. Dialed it in a few months ago & even adjusted the rub to make seasoning for some cured tri tip sausage I made a couple of months ago that were killer.[image: 1559103279541-tri-tip-sausage4-3.25.19-resized.jpg]
