@jsaaz23 Thighs are so much better than breast in my mind. Especially if you aren’t adding any pork fat. Great choice of seasoning to protein!

@jsaaz23 Wow! Those look like they came right off the supermarket shelf! I heard on the radio yesterday that every hotdog you eat shortens your life by 30 minutes. Really? What the h*ll. I’ve an aunt that’s 98. I don’t think I want to live that long, anyway. I’d rather enjoy a good hotdog.

Personally don’t care for it in my venison. My brother loved it so he got the whole 12lbs. Actually never heard of it until hanging around this site.

@Parksider freezing between stages is a great idea, especially when looking for emulsification. It takes a little longer but it is worth it!

@Jonathon I used 80/20 Beef/Pork with 80/20 lean/fat. The strings have really two purposes, one is to hang them from hooks in the smoker and the second is just appearance.
