@Derek_D Sorry, are you saying when you said the 21mm clear in your first post you were actually talking about fresh? I’d guess they were cooked too hot or something went wrong as I grill fresh collagen all the time and unless I get distracted and the internal temp goes up around 190 they don’t split on me. Possible that they were a bad batch I guess but I’d imagine we’d hear from a lot of our commercial customers if the casings themselves had an issue?
@Derek_D You’ve chosen a few awesome ones! Apple is incredible and gets overlooked all the time cause “Apple” isn’t all that exciting! Hab Mango is a favorite of lots of people here. Philly has become a lot of peoples “go to” brat, you can eat a lot of them, which isnt always true. More than 2 habanero mangos isn’t always the best thing and Hatch Green Chili is probably the best thing Excalibur has done in recent years (though I feel that way about lot’s of seasonings!)

@Jonathon it was more in the cutting process. Just not nice and neat like the Z-Linker was showing. Just a bit stuck out after cooking. That didn’t bother me. In this first batch we did not add any water or binder. Our normal process is to grind threw a 3/8" plate once then a 3/16" plate. This time we tried grinding twice threw the 3/8" plate to give it a bit more texture. We agreed after trying them that we need to go back to the 3/8" then 3/16". Chunks are almost too big. This is all in testing phase now. If we do need to add water/binder I will need to revise my recipes. Which is no big deal since I haven’t submitted them yet.
@Derek_D Darn, I thought from how you phrased that I thought maybe I found someone else who disliked it! Willies is the best, I go through periods where I like others more, but I always go back to Willies!
@twilliams Yep. Will be a couple weeks before I get the chance to use it. Busy this weekend. Throwing a couple briskets on my RecTec next weekend. Hopefully I can get everything lined up for the following weekend.
@Derek_D Ys, the PK usually goes freight. If you need any help cs@waltonsinc.com would be the best people to contact, I have vague memories of how to track freight but they are vague at best! You could email them with your order # and tracking information and they could probably give more detail.
