What is the Most Important Piece of Equipment?
Whether you are making whole muscle meat or restructured you need a way to thermal process it. When we make Jerky here we are lucky enough to use our Pro Smoker 500T HVE Smokehouse but this is simply not going to be an option for most people. With some experimentation, you can get similar results with a Pro-Smoker PK-100 and controlling the dampers.
Do You Need A Slicer?
When making Whole Muscle Jerky one of the most important things you can do is to cut it all to a uniform thickness as this will help cook and dry at an even rate. The slicer we use is the Walton’s 10" Slicer.
Do You Need A Stuffer?
If you are going to make restructured jerky then you need some way to extrude it into strips or sticks. I would recommend a Sausage Stuffer and an All-Around Jerky Maker as this will give you the ability to make many types of sausage as well! You can get similar results Walton’s 11 lb Sausage Stuffer or a Jerky Gun though.
$500 Budget for Equipment
In my opinion, I would spend the majority of my budget on a slicer the Walton’s 10" Slicer has a hefty price tag of $479 but it will cut evenly and can also be used for so much more than just jerky.
Other Equipment Or Supplies
- A Smokehouse will give you a lot more versatility and can obviously be used for so much more than jerky.

bocephus Fair enough. I’m sure everyone would love the tutorial. Even information like how to slice the meat, cross grain vs with grain and types of meats will be helpful. Thanks

PREACH IT!!! I would not go so far as “party lines” but there was something fun in testing your agility to a phone cord stretch throat level. I don’t even think I would want voicemail features. If it is that important come visit or call back.

Dr_Pain My favorite mobile phone was that old Motorola one piece that I had up until I am thinking about 1998. Then I had to go to a big city, I think was Detroit, on assignment & apparently my old analog phone would not work & I had to go digital. That old analog was more durable & heavy duty & much louder & easier to hear on than any allegedly clear digital version. Then you see what happened to TV.

bocephus FOMO - fear of missing out. People just can’t resist seeing just who is calling or who is texting. They need a life. Frankly, I believe that the quality of life and of family has diminished over the years. H ell, Families don’t even sit down to a meal together anymore.

Approximately 6 years ago I informed my wife, kids and friends that:
- At work my cell phone will be on my desk and will be checked ONLY if I am at my desk…AND… that for any pressing emergency that they should contact my office phone and talk to my secretary. once I get home I will no longer have
- At home my cell phone will be on my bathroom counter and will only be checked when I go use the bathroom (unless my wife specifically ask that I keep my phone handy). Other than that, if it is a pressing issue that they can contact my wife or kids to get in touch with me (since we no longer have a home phone).
My wife and kids always have their phone handy, so my real friends have their numbers (and my real friends also know where I live). All people of value in my life know that I prefer a face to face over any other mode of conversation or communication.
I made the transition because I was consumed from the moment I woke up to the moment I went to bed at night, and felt that I needed to be at everyone’s disposal (friends, family, family friends, patients etc…). I have felt so liberated ever since. It also weaned out a lot of leaches out of my life because they were not getting their ways fast enough.

FOMO is definitely one thing. Fear of disappointing is another. People now believe that they are entitled to instant results and gratification. They call (no answer), leave a voicemail, send a text (2 seconds after leaving the voicemail) and then track you down. I’ve had people in my life call/text/email repeatedly. When I finally reach back and question the behavior their reply was “out of concern for me”. What a bunch of crock!!! It is because they grew irritated at being “IGNORED”. Again people feel entitled to Instant Gratification.
