    Recently I purchased this mix to do some brats, but I have been thinking it might do better as a summer sausage instead. Any thoughts?

      EDaniels How about horseradish beef brats? The summer sausage idea may work too, but I think you would have to add the Surecure to the mix to make it safe for smoking & summer sausage. You may want to stand byt for some of the guys with much more experience with that & see what they say as I have not per se’ used the Horsradish Brat mix you mention.

          calldoctoday that was my original thought was all beef. Which also gave me the thought of a summer sausage with sure cure and soy binder. Thank you.
