Venison Habanero BBQ Summer

Tuesday I had a friend help me grind and stuff 12 lbs of summer sausage with the 8 lbs of venison my neighbor gave me. Thanksgiving day I smoked it. Turned out great even though I forgot to put the pound of high temp cheese I had to put in it. My friend was asking so many questions and I didn’t notice that I forgot the cheese until it was too late. I’m going to have to start using a check list.
After trimming the venison trim up a little more I had 7.25 lbs and added pork butt to bring the weight up to 12.5 lbs. I added 3 ounces of Walton’s sure gel and .5 ounces of sure cure with 20 ounces of water.


I think it turned out well and is very tasty. Total yield was 14.25 lbs, so I hardly loss any thing from smoking. Sorry I don’t have more pictures. I was too busy and didn’t think about taking pictures. My neighbor was thrilled when I brought it over to him. Our deal was that I would make it for him and give 8 lbs of sausage back to him no charge. He got about 9 lbs back. I ended up with almost 5 lbs for myself. I think it was a good deal for me too because he helps me so much around my house.

I just a call from my neighbor and he said it was fantastic. Funny thing is when he moved in I gave him some of this that I had made with beef chuck. When I told him the name of it he said he didn’t like hot stuff. I told him try it you might like it. I told him after he got his deer that I got some H summer seasoning. He said you got anymore of that habanero stuff. Luckily I still had a half a bag.

marzig20 Looks really good, I helped a friend make some elk summer sausage in Sept. I ended up with one stick, he wanted to give me more but I reminded him he had to give some to the guy he got the elk trim from and once his kids tried it he wasn’t going to have the rest for long. It was his first time making it but I figured I owed him at least that because he took me fly fishing for trout for the first time 35 years ago. Hopefully he will be as addicted to sausage making as I am to fly fishing.

bocephus I gave a whole chub to the neighbor that helped with grinding and stuffing. Also a half to another neighbor. I live by myself and just can’t eat that much in time even with freezing it. I want to try snack sticks next after I get my new Walton’s 11 lb.

marzig20 Once you have your stuffer snack sticks will be easy. I just ordered an 11 lb stuffer, moving up from a 5 lb stuffer.

marzig20 I have some habanero/bbq seasoning that I won in a giveaway, can’t decide if I want to make summer sausage or snack sticks. Maybe a combination of both
