Ground Meat Shish Kebabs Binder

Hello! I have been trying to master ground beef shish kebabs but unfortunately, despite my best efforts, the meat has been falling off the skewers into the fire. I recently visited a Middle Eastern grocery store and they told me about an additive that people add to the ground beef to make it stickier and less prone to falling off. Unfortunately, they were out of that product and I wasn’t able to buy it. I was wondering if Waltons sells some kind of binder that would work for this purpose?

When I make kefta kabobs I normally toast a slice of bread, let it cool and then soak up some water. I also add 1 egg to my mixture but the most important step is the protein extraction. This start with the salting and finishes when you put the meat in the mixer with the paddle attachment and mix it till it becomes sticky. There are other binders you can purchase but they only act to bind and don’t really offer much in terms of anything else.
