Newbie question leftover sure cure

    So I have been pitching my sure cure after use. What I mean is the left over in the bag as I have been making 5 lbs batches. I read somewhere that you can save what is left…but it didn’t sound right…my question is have I been throwing it away unnecessarily? Or am I being overly paranoid of bacteria?

      Benjamminn salt wont get bacteria in it. You can save it. I usually fold bag over, tape it and vacuum seal in a bag

        Benjamminn but i must add you need a very good fine measurement scale to get the correct amount of cure for your meat block. Im assuming you have one since you are doing 5 lb batches.

          Yep, sure cure is one of the least perishable ingredients you can leave on your shelf.

            I just keep it is a 1/2 pint jar with a good air tight lid. Works great for me.

              twilliams you guys have to go metric. You need 156 PPM nitrite to meet the health standard. In the Great White North it’s easy to do the math and weigh the cure in milligrams for the weight of your meat mass which is in kilograms. Get a grandkid to help you do the math

                                    Benjamminn I don’t know of any, but I think that would be an excellent idea. About time that the blue team can prove it dominance.

                                    For the most part, the orange team is color blind.

                                      Some of us requested an unaffiliated Grey team to maintain our independence and still belong to a “team”
                                      Other than funning around It does not affect you

                                          I was torn between team blue and team orange. I actually belonged to both for a bit but switched to team blue because I was reminded by Tex_77 that I back the blue (I’m a LEO). Thanks Tex_77. Team grey is intriguing though!!!
