<![CDATA[Newbie question leftover sure cure]]>So I have been pitching my sure cure after use. What I mean is the left over in the bag as I have been making 5 lbs batches. I read somewhere that you can save what is left…but it didn’t sound right…my question is have I been throwing it away unnecessarily? Or am I being overly paranoid of bacteria?

And I have so many bags of cure because I’ve had a bucket of isntacure for a while and I’m using that first before the bags included. The bucket makes it nice to make smaller batches and just reseal. Also makes it nice when I want to convert fresh into cured!

You need 156 PPM nitrite to meet the health standard. In the Great White North it’s easy to do the math and weigh the cure in milligrams for the weight of your meat mass which is in kilograms. Get a grandkid to help you do the math
