    Chef With a bunch of experimentation you might be able to make a decent product but it wouldn’t have the same texture as fresh. The sweet onions that I have dehydrated become very sweet and lose some of the onion character.

    Joe Hell When I dehydrate sweet onion I put about 15% dry storing onions in with it. That seems to help hold the onion flavor better.

      @Fat-Bob Good call! The rosé sweet onion are almost like candy when dried. I’ve been making a lot of brats lately with up to 30% fresh ingredients. The flavor and texture is outstanding!

        The Rose is a good sweet onion. They grow some around here but they disappear out of the markets fast. Still want to try the onion sausage you guys were making. Just to many irons in the fire right now.

          Joe Hell or anyone who dehydrates vegetables. Joel, I know you use a lot of Walla Walla sweet onions. Could they be dehydrated and used in recipes like your sweet onion sausage without compromising quality?

            Brianzipperdog123 It is Joe Hell recipe and it in in the category of meat processing. Let me know if you can find it. I did as he suggested and added 10 grams of crushed red pepper, I too like a bit of heat. This is a very sound recipe. I’m making another batch this thursday. Joe Hell , would you post this in the user recipe category, or I can post it if it’s okay with you.

                      Jonathon I run onions in the dehydrator. I’m not sure of the exact time but it could be as much as 30 hours or more. I’d also suggest doing this outdoors! lol
