Joel, I know you use a lot of Walla Walla sweet onions.  Could they be dehydrated and used in recipes like your sweet onion sausage without compromising quality?</p>

I’m not sure of the exact time but it could be as much as 30 hours or more. I’d also suggest doing this outdoors! lol</p>

Let me know if you can find it.  I did as he suggested and added 10 grams of crushed red pepper, I too like a bit of heat.  This is a very sound recipe. That seems to help hold the onion flavor better.</p>

The sweet onions that I have dehydrated become very sweet and lose some of the onion character.</p>
