More Venison Sticks

Last weekend we made 13# of Willies snack sticks with pepper jack cheese in the 21mm casing and 13# of Sweet Honey BBQ sticks with cheddar cheese in the 19mm casing. Both turned out fantastic! The wife loves the Sweet Honey BBQ. I really like the 21mm casings. Not much bigger than the 19mm but makes a good stick size.

did you have to add anything other than just the seasoning?

TODDG25 I used the Willies seasoning, sure gel, ECA, and cure.

Derek Curry Putting the Pk to goo use huh?! What were YOUR thoughts on the Honey BBQ? I’ll tell you right now, it’s not my favorite, probably in my bottom 2 or 3 of snack sticks BUT everyone else here tells me I am crazy and that it is great.

Jonathon I would have to think you are crazy also. LOL. Although I do like the Willies better because I like the settle back end heat you get (that could be the pepper jack cheese). The Honey BBQ are great too. Actually my employees and my wife prefer the Honey BBQ over the Willies. I will definitely be making both again.

Derek_D Darn, I thought from how you phrased that I thought maybe I found someone else who disliked it! Willies is the best, I go through periods where I like others more, but I always go back to Willies!
