Vodoo Ranger IPA brat

When I make my beer brats I usually just displace the beer for the stated amount of water. They also make beer flakes that give you more beer flavor to add to anything that you are making.

Joe Hell Ive tried some brat recipes with beer before using watered down adjunct lagers. I like the idea of using habenero/mango combined with a full blown IPA. It sounds like a great combination and it would be easy to replicate since that seasoning combo & beer are readily available. The only thing I dont know is the correct ratio of beer to use.

IVERYAN We might have to see if our local whole foods has this brat, then try to replicate. Shouldn’t be hard. We just take our standard habanero mango brat, and add in some beer. I’m thinking two or three 12 ounce beers for a 25 lb batch.

Joe Hell Probably depends on the beer and personal taste buds. If I did a light beer, I’d definitely do more than if I did a double/triple IPA or barrel aged stout or something else heavy. I’m sure we’ll do some testing here in the next couple weeks and we’ll have a recipe and guidance to put out there.

Joe Hell yeah, that would be weird. I don’t think it should “leak”. We’ll definitely have to test a few amounts and see what happens, but yes, Carrot Fiber should fix that.

Austin Unless you are going to force me with the threat of losing my job I will not be using an IPA (as they are the most disgusting of all beers) I will be using something like newcastle. However…maybe the play here is a split batch? Try some with your flower beer (IPA) and some with real beer? See how many times the real beer one is better?!
Joe Hell You use the Space dust IPA, right? Is that better than the voodoo ranger? IVERYAN We will get this run in the next week or so, I’ll pop up a post on it to let you know how it went and then do a full video a few weeks later.

@Jonathon- I understand not liking IPA’s. I dont care for them myself. That being said, the hoppy/fruity profile from the IPA mixed with the haberno/mango is intriguing to me. As far as Newcastle goes, I find it to be fairly bland, and I question whether much flavor will come through. I like your idea of trying some batches with a couple of different beer styles. I suggest a contest, and if you lose, you have to drink the leftover IPA’s on a livestream.

Jonathon I haven’t had the Voodoo Ranger but I’ll look around for it. I expected the Space Dust to overpower the brat as it is quite hoppy…that wasn’t the case at all. The beer has a citrusy hops profile and despite the strong bitter character I didn’t notice that coming through into the finished product. I used another local brewed IPA with the Chicago brats and it turned out very well! That sausage was a huge hit at the local pizza place and the brewers were thrilled to partner with us. Everyone involved sold a boat load of product that day!

Jonathon I would definitely try the Voodoo Ranger since that is a sausage out there already. Would be interesting to side by side compare. I’m not a huge fan of trying Newcastle, because like IVERYAN said, it is a fairly bland beer in my opinion.

Austin I heard about New Castle long before I had a chance to try it and was looking forward to it. It was boring. I don’t understand the hype. I think I’ll grab a sixer of the Voodoo today. I’m offering Jambalaya brat and Andouille at the shop this weekend. I think Voodoo brats would help keep the Mardi Gras theme rolling nicely!

Joe Hell looks like you got the imperial. Per New Belgiums website there are several versions. I think the brat company is using the standard ipa. Fyi- the imperial is 9% abv, 70 ibus & 250 calories.

IVERYAN I just made a test batch of Smoked Habanero & Caramelized Pineapple ‘Voodoo’ brats and they turned out excellent! The pineapple added a slight sweetness and a great aroma. The acid didn’t start to break down the meat but it may have been on the cusp. Next time around I’m bumping the spice big time. Here is the recipe for 11 lbs.
11 lbs. ground pork
100 grams kosher salt
30 gr. Dried organic minced roasted garlic
7 gr. Fresh ground black pepper
11 gr. Red pepper flakes
10 gr. Dried parsley
10 gr. Dried chives rings
10 gr. Toasted fennel
3 gr. Ground smoked habanero
250 ml Voodoo Ranger Imperial IPA
4 oz. Perfect Pureé Caramelized Pineapple.
