I would think there are other puree or concentrates you could find at the store…that or make them yourself.

This time I doubled bumped the ground Habanero to 8 grams. These had a good lingering heat that stuck with me for about 30 minutes but it still wasn’t overpowering, nor did I break a sweat. The concentrate had a similar ‘sweetness’ and character as that of the caramelized pineapple. The company has many flavors to chose from and I’m excited to experiment with many of them. These concentrates are similar in ratio to store bought frozen drink mixes so that is something to consider. Obviously you would want to avoid the more acidic choices…lemon, lime, grapefruit, etc…

It was the same for the Elysian Space Dust. I was initially reluctant to use it with concern that the bitterness would overpower but surprisingly that was not the case.

Gotta admit I was on edge about the Habanero until I stopped at Peasant Fest and tried that with the ghost pepper cheese. Very good but suprisenly not as hot as I’d thought it’d would be. Double it??? Can’t wait to hear.

IVERYAN I just made a test batch of Smoked Habanero & Caramelized Pineapple ‘Voodoo’ brats and they turned out excellent! The pineapple added a slight sweetness and a great aroma. The acid didn’t start to break down the meat but it may have been on the cusp. Next time around I’m bumping the spice big time. Here is the recipe for 11 lbs.

11 lbs. ground pork
100 grams kosher salt
30 gr. Dried organic minced roasted garlic
7 gr. Fresh ground black pepper
11 gr. Red pepper flakes
10 gr. Dried parsley
10 gr. Dried chives rings
10 gr. Toasted fennel
3 gr. Ground smoked habanero
250 ml Voodoo Ranger Imperial IPA
4 oz. Perfect Pureé Caramelized Pineapple.

I figured at nearly double the alcohol it was the bigger bang for the buck and my only option!

Per New Belgiums website there are several versions. I think the brat company is using the standard ipa. Fyi- the imperial is 9% abv, 70 ibus & 250 calories. 🤣🤣
