        I have a 20lb hand mixer and when I’m mixing pork the pork sticks to the sides like crazy. Any suggestions on how to eliminate this problem?

          I have better luck when the meat block is really cold, and check the direction you are mixing. I’m left handed so depending on the hand mixer the paddles might be pushing the meat to the outside?

            capt jack Dave R has a good recommendation with keeping it cold but, I find that this Plastic Hamburger Paddle is the best mixing assistant possible. I use it to push things off the sides and I use it to transfer into and out of the mixer!

              Jonathon the hamburger paddle looks like answer. Also great for scraping it out prior to cleaning

                  I use a mixer I made that goes in my cordless drill and a stainless pail that hold about 20 lbs which is the capacity of my natural gas smoker. This works like a charm and you can easily achieve the extraction and dough consistency you desire. I also made an attachment for the drill that turns the handle backwards to open the stuffer for refilling. As an octogenarian I like to have things easy and not have to mix cold meats with my hands or loose time turning the handle

                    I use Walton’s white oil. When I oil the gasket and gears on my stuffer I just put a little in my 20 lb mixer and rub it all over. Works really well.

                      capt jack A little bit of food grade lubricant definitely does help (mineral oil, silicone spray, etc.). Cold meat helps, as does changing the direction you are mixing. I’ve also found that the fuller you get the mixer, the more anything that sticks to the sides gets pulled back in. If nothing else, there’s scraping.

                          Jonathon Do you have any more information on the new mixer on the horizon? Did you ever find the minimum meat block for it?

                            YooperDog I can reliably say it will do 12.5 lb but it does require a little more work. You have to stop it every few minutes and scrape the meat off the walls/bottom to get it to mix well. it is still much better than having to do it by hand in my mind though! Gonna try a 10 lb batch here soon but I just don’t think it is going to work, the chamber is just a little too big for 10 lb to be reliably mixed.

                              Jonathon Thanks!!! I appreciate the information. I guess I will need to keep my production to 12.5# or greater, darn. Any words on availability/time frame for the mixer and pen thermometer?

                                  How’s it going people? I bought one of those 50 lb. mixers they just received. The one I received looks like its second hand. The powder coat or the coating that is on it is all scratched up because whoever shipped it back didn’t put the bubble wrap back on the paddle and its been bouncing around in it. It also looks like whoever used it didn’t wash it very well because it looks like there’s mold or old grease left in it. Did any of ya’ll have anything like this with mixers that was purchased recently? I will try and get a hold of someone at Walton’s Monday to see if they will help me with it. Also It doesn’t look like a 50 lb. mixer. I put my 20 lb. next to it and its not much bigger. I was just wondering if anybody else had problems with recent buys. Thank You Jason

                                      Jonathon I have no way to take pictures and send them to you. If I had a way to take pictures I don’t know how to send pictures. I graduated in 1981 and back then they didn’t have computers. The little bit I know about computers I learned on my own. I haven’t figured out pictures yet. I don’t even have a smart phone. I’m a 57 year old disabled mechanic with very little personal computer experience. So I don’t know where we take this from here.
