    I’m making jerky from ground venison using a jerky shooter. How do I know I’ve mixed the meat and seasonings long enough?

      GlennT I haven’t made restructured jerky but the process will be the similar to snack sticks though you don’t need to go that far. You can mix by hand until the point where it just starts to go ‘stringy’. If you grab a clump and it sticks to your palm when turn your hand over you should be fine.         GlennT Yup, like Joe Hell says, you want to mix until it is tacky and sticky. The palm of the hand trick is an easy way to tell as well. You could potentially overmix it but that would only happen if you were mixing for like 20 minutes.
