The palm of the hand trick is an easy way to tell as well.  You could potentially overmix it but that would only happen if you were mixing for like 20 minutes.</p>

You can mix by hand until the point where it just starts to go ‘stringy’. If you grab a clump and it sticks to your palm when turn your hand over you should be fine.
