    The maple chipotle sounds great. I did a honey sriracha last time, but needs more Sriracha next time. I picked up a Berkel slicer at an auction and makes things so much easier than the toy I was using.

      I couldn’t imagine slicing two bellies or more without a good slicer. I had a budget Amazon slicer for a long time before a small plastic part broke and rendered entire thing useless. Shopped local marketplace for a commercial used one and stumbled on this almost new Globe G12. It is now a family heirloom as I it is used at maybe .01% of what it was built to handle.

        Maybe try to find a really good slicer for an okay price? I think I paid $550 for mine but due to the shape it was in I wasn’t too bothered by it. I think everyone keeps hearing “grab an old Berkel for $100” but those deals are rare and may end up needing a new blade or servicing, etc.

          I paid $300 at an auction for my Berkel, very good shape except for the sharpener. Looks like they never used it to sharpen or true the blade & it was corroded & the spring is missing. I haven’t gotten around to looking for someone to fix it. The blade is plenty sharp & for what I’ll use it for, I won’t need to sharpen it for a long time.

            Been letting the bellies chill in garage fridge since smoking and this eve was slicing and packaging day. Entire garage smells of smoke. Water bottles in garage fridge crisper drawer smell like bacon. It is glorious. Each pack is 1lb and ended up with 18 packs plus a pound or so of off cuts I made this eve.

              Curious to what pork bellies are going for around this community. Lowest price I can find right now is 4.49lb. This is from a local grocer. This is double from what I paid three months ago. Guess it’s still cheaper than the 10lb they’re getting for the commercial stuff. Butcher shops are $2lb higher.

              My local Sam’s club doesn’t carry them and in fact are about $2lb higher on all there meat compared to local butchers and even grocery stores. Weird.

              Anxious to try again using the EQ method this time but…

                  PapaSop bacon is any where from 4.59 to 8.00 so belly is going to be high

                          PapaSop I made a bunch a while ago, so I have not bought any for a while, but I’m sure the price will shock me.

                                PapaSop That is just about cheaper than what I have always had to pay for them around here, if I could ever even find them. Totally crazy! Hopefully they will go back down to reasonable soon for all you all & you can find them too.
