    Currently on the drying phase of the snack sticks, I’m thinking about leaving out the smoke to get as much flavor profile of the seasoning as possible. Anyone else do a meat cook with no smoke?

      yes, I have left out the smoke in the last batch of pepperoni sticks and just used the smoker to cook them. We didn’t notice much difference in taste.

        twilliams My family is somewhat indifferent on smoked summer sausage, snack sticks, etc. so lately I usually don’t smoke them.
        Sometime I put a little liquid smoke in the mix

        Give a man a fish and he eats for a day
        Teach a man to fish and he drinks beer for a lifetime

          twilliams I have with both summer sausage and snack sticks, my wife is not a big fan of much smoke flavor, they turn out fine.

            twilliams take half of your batch and do with no smoke then do the other half with smoke. That is if you have the time.

                  HerbcoFood no I did not mix together. I did two separate 11 lb batches but cooked them in the smoker together. But now you got me thinking of mixing the other halves of seasoning together for another batch.
