      GWG8541 I have the patience for the cure, I make sauerkraut that I wait seven weeks to ferment, but like the first time I made it I will be nervous taking the first bite.

        lkrfletcher It has been too long since I have done some homemade bacon. I might need to come up with a reason to make some for a video.

          bocephus I’m with you on that. I remember the first time taking a bite of my homemade sauerkraut, thinking “man I hope this doesn’t kill me”. It was kind of the same with the bacon. The worry turns to extreme happiness real quick.

              lkrfletcher I think you will find it fun. Just takes patience and planning ahead. I can’t wait to get some hanging in my new pk100. Will be ordering the bacon hangers this weekend. Hopefully can talk Jon into putting on sale on Monday…hint hint

                    I’ve got some bellies in the freezer waiting for it also.

                                          So - When I remove my bacon from the fridge after 7 days, I want to pepper one and jalapeno season the other. So - Rinse them well, Pat dry and season thoroughly - Then let sit in fridge overnight prior to smoking in the PK100?
