Thanks for all the replies! I hunt in unit 112 and 113. I’m blessed to know a rancher that lets me hunt his land. Antelope is a great tasting meat! I love the backstrap! I like to cook it up on the grill medium rare, slice it really thin and let all my family and friends try it. So many of them are intimidated to try it, but once the do they can’t get enough.
My buddy and I grind the rest up and make pepperoni sticks, cheddar jalapeño brats, breakfast sausage using waltons seasoning for everything. SO GOOD! -
and Congrats on your goat! It is my favorite game meat that I’ve tried so far. I would take a goat steak over an elk steak, personally. Probably going to be in the minority on that one!
RafterW I am in complete agreement on the antelope being better than elk, as long as it was skinned and cooled in a timely fashion.

Besides Antelope that is how I have always heard of them being referred to. I mean they are the fastest land animal in North America.

rticeiii I would save the roasts on the hind quarters, you can cut to steaks or cook whole as a roast. Front shoulders you can get some good jerky meat and the trimmings either burger or sausage, unless you like stew then save chunks for that.

Spidey I initially heard a long time ago from someone that they were horrible & so I was confused & asked someone I really trusted, my Dad, who said they ate them all the time as a kid & they were very good. Then later I talked to others who confirmed the same, including a cousin, & some that said they had a sort of sweet taste & you had to get them cooled & broken down quick & they were good. Just about like about anything else in my opinion. I have still never been able to try them, but if they are better than Elk, that is very good. I have heard that moose is better than Elk too & initially I would have never imagined that, until I thought about it. I spoke with a guy in Oklahoma that said Caribou he took were horrible & worse than the Antelope the other guy described. However, since then I have heard that Caribou are good, but just like anything else as I mentioned & you also have to be very careful about when you take a buck, there again, just about like anything else.

calldoctoday With any wild animal taken, the field care is very important, especially since it’s still somewhat warm out when Antelope season is open.

I remember years ago running across folks that could not stand venison, while that was just about all the red meat we ate back in the late 70’s & 80’s & into the early 90’s & we would not have eaten that much of it if we did not like it. That is pretty much what I would tell them too & break it down into detail. What you said was basically my point & you could not have said it better.

calldoctoday a lot of that is in the handling temp. of the meat and processing temps. with the cooking of the end product , how many times have you seen someone hang one outside in 40 + or tie it to the front bumper in the heat to take it home !

craigrice Too damned many! Excellent point made again. They must have found some way to make soup out of them horns! Because that is about all you are going to get anything good out of when you do that…

I had a neighbor that left one hang from a tree for a week in 40 + I would not even have fed it to my dogs at that point I care about them more than that !

craigrice I will say that I used to hang them in my barn (dressed out & cool) for about three days to age when the temps used to stay down in the 30s for 24 hours a day for several days. That seemed to make the meat better, we thought. The temps had to stay down in the 30s though. If it had gone above 40 I would have finished them out.

I field dressed and got it to my truck, where I had a tarp. Put antelope on tarp with bags of ice under it and filled cavity with the milk jugs then wrapped it up. Got it home and broke it down right away, the only bad part I had was high on the neck. All the meat was great and would like to get another one but I haven’t drawn again.

bocephus that is the key to antelope. Get them cooled down and broke down as soon as you can.

After the skin is off, its possible to lower the meat temperature much faster, whether it be with ice or just cool air while hanging.processhead I cut the skin back around the body and put the ice between the skin and meat and wrapped it in the tarp, that is why I lost a little neck meat, I didn’t skin up as far as I should have maybe, but only lost what would have been a pound of sausage meat.

calldoctoday My brother in law shot a caribou in Alaska and he didn’t like the meat, he gave me a couple of roasts and I figured if nothing else I could make some jerky. I cut one of the roasts into nice steaks and cooked them on the grill just to try it. I thought it was great and called him and told him don’t give any more away, I would take the rest of it. He asked me what I did and I told him season lightly and don’t over cook. I should have never told him as I never saw another piece of caribou.
