    Queso: 1/4 lb Butter, 2 medium onion (diced), 1/2 cup evaporated milk, 1-2 cups chopped green chile (to taste), 1 can petite diced tomatoes drained, 2 lbs velveeta, 1/2 lb mild shredded colby longhorn cheese (for a change of pace could use mozzarella or other cheeses of your choice). Sauté onions in butter until translucent, add chile, evaporated milk and tomatoes and heat thoroughly. ,hunk up the velveeta and add to mixture stirring while melting, when melted add colby and continue stirring until that is melted.

      ND Mike I agree, nothing better than a meatloaf sandwich. I like a pound of burger and a pound of sausage when I make meatloaf.

          Always do my meatloaf in my mom’s old cast iron loaf pan anymore, comes out so much better. I don’t know where she got it, but I suspect it came from my grandmother, IMG_0191.JPG

              johnsbrewhouse Now that is nice. I have been trying to find a few around that size for a long time & have not been able too. Meatloaf looks good too.

                calldoctoday Going down to Amish country soon and will look for that item. They have to have something like that down there.

                  zbigjeff Have a safe & enjoyable trip. That should be a real nice trip. I recall seeing a community in Oklahoma & I think it was Pennsylvania when on assignment. It may have been Ohio. I cannot remember now. They have little signs all over the place showing folks driving horses & carriages & to be careful for them. Very nice country.

                      Let’s revive this post. These are called totchos. It is tater tot nachos. The tots were Ore Ida crispy crowns deep fried. Then added a jar of queso cheese, 1 can of Rotel drained, and a 1 1/2 of seasoned taco meat. Then shredded cheese and back on the grill or smoker to get happy.                         zbigjeff Must be doing pretty good with that new hip of yours; being able to go “treasure hunting” in Amish Country. Whenever we go to the Amish areas in Wisconsin or down in the Ozarks; where the Wife’s family is from, we always find something interesting and useful. We also always come home with a bunch of jam, jellies & preserves. Good stuff!

                          Bob Stehlik Yep, the hip rehab is coming along nicely. I walk now about .5 miles per jaunt (without a cane for one week now). Take a rest and then do it again. So, with that being successful, you guys forced me into thinking that I could do a bit of shopping in short stints. 🙂 Was going to do it today. But, I decided to cold smoke some sirloin steaks and then sous vide them while I’m waiting on a crew to replace my hot water tank. In the middle of smoking them right now. I mixed up some magic prairie dust and added a bit of #1 cure so I don’t kill people. I did the same to pork chops the other day and OMG. The “trip in search of cast iron bread pans” will be on the short horizon.

                            TexLaw I have been doing a seasoning test with flaxseed oil since you mentioned that you received some chipping. Yup, flaxseed only seasoning on mine is chipping like crazy and will need to be cleaned and re-seasoned. The CI with only 4-6 coats are holding fine, but I use another high smoke point oil for my daily users for after use. Thanks for the info.

                                      zbigjeff you are correct, its in Kidron. It is awesome to visit, but evertime we go, we seem to buy something. My biggest problem in going to Amish Country is that my bathroom scale malfunctions everytime we go and says I’m 5 to 10 pounds heavier than I should be.
