Salt 15gSpices
White Pepper 4g
Ginger 2g
Cardamom 2g
Sweet Paprika 2g
Garlic Powder 2g
Coriander 1g
Mace 2g
Fresh Onion 20gOther
Ascorbic Acid 1g44mm Beef Casings

I’m letting it rest for the night and then I’m planning on trying the finished product tomorrow. I did try a sample prior to smoking and it was delicious. So, it can only get better with some smoke! I will post a cross-section pic.
Pivodog did you use a bowl cutter or mix/grind?

Pivodog those look great. Im not sure how to eliminate air bubbles when using a bowl cutter. The last time i ate a commercial hot dog i took a close look at the texture & noticed it had some air bubbles also.

Commercial bowl choppers operate under a vacuum during at least part of the chop cycle. I don’t think eliminating air bubbles is the main reason but it would be one of the side benefits.

Pivodog your recipe calls for onion are they fresh or dehydrated or caramelized
