What would this meat product be called?

    I am trying to figure how to make what I thought was ring bologna except that I usually pull it out of the freezer and boil it in hot water to cook/heat it prior to eating.

    When I read the ring bologna recipe on Walton’s it appears to be a product that you slice and put on crackers as an hors d’oeuvre.

    What is the bologna cooked prior to eating?

      The ring bologna I am familiar with is sold as an already cooked product that can be eaten cold or heated and served warm.

      When heating to serve a cooked product like bologna, its better to simmer it in hot, but not boiling water.

      Boiling an already cooked product in a casing will just leach out the flavor and could split or burst it.

          All ring bologna is, is a giant hotdog you can eat it cold or heat it up.

            As far as I know, all ring bologna recipes are intended to be smoked and cooked as part of the manufacturing process.
            I have never heard of one that is stuffed and left uncooked and then cooked prior to serving like you would do with fresh bratwurst or fresh Italian sausage.

              My Understanding is it a ring of Sausage normally fully cooked but ground very fine like bologna .

                Thanks for the responses I guess I will look around the internet some more for recipes like you are describing to find a finer texture version.

                  If you go to these seasoning you can find the Meatgistics link on how to make them.

                  To get the fine texture you need to grind the meat several times through a small plate.

                    TLDTLD not sure how much finer you want, but here is a pic of what i do. No different than my summer sausage or snack sticks. 1 grind through 3/8" plate then 1 grind through 1/8". Then add seasoning, sure cure and water and suregel and mix for protein extraction20200302_195649.jpg
