    I use fresh apples and pears wit chicken, works great

      Tex_77 I like the craisins because it adds a little sweetness. I use them, wild rice and cheddar in my Wisconsin brats and summer sausage. Maybe it’s just a Wisconsin thing.

      kyle The wife and I go to Cranberry Fest in Eagle River every year. Prime Choice Meats; the local butcher in Eagle River makes great blueberry brats, cranberry brats and wild rice brats. All three are delicious and the flavors all work well with the bratwurst. We always bring some back to Colorado with us. I’m a Wisconsin native and definitely agree with you that it is a Wisconsin Thing!

        gary s I tried doing just that, it turned out to be my biggest sausage failure.

        Do you have a recipe for it?

          Bob Stehlik that’s cool you make it back to the badger state. I’m hoping to visit Colorado one day to elk hunt before I get too old. I could make alot of sausage with a big bull.

            kyle I hunted elk and deer for over 30 years, haven’t been in 15 years or so. I scored 1 nice bull and 3 really big cows in those 30 years. Even being a Colorado resident, the price per pound is very high. Most of the good elk areas are by draw only and you’ve got to hit the elk at the right time as they move through. lkrfletcher seems to good to a pretty good area. You might contact him since he is still an active elk hunter. I also think Wisconsin is starting to open up elk on a limited basis. I still read the Milwaukee Journal-Sentinel on a daily basis.

              Bob Stehlik very limited tags, only 10. I do apply, but so do thousands of others. Like with all hunting, getting an animal would just be a bonus. I do alot of hunting here in Wi, but would like to see it out there. I have friends in Alaska, so that’s also on my bucket list. Thanks for the info and remember to keep bringing a bit of Wi home with you, even if it’s just sausage 🌭 undefined

                    lkrfletcher love to talk to you someday about it. Thinking next year might try a trip. My son graduates high school this year and going to start college in the fall, so calendar is pretty full this year

                        Id say dehydrated. They have dehydrated apples in the apple bratwurst. I believe so it doesnt react with the fruits natural juices. I think its more noticeable in smoked sausage. Not 100% positive on this

                        twilliams my experience with dehydrated is that the only flavor that really carries over is sweet. Fresh can work if you cook it immediately. I haven’t tried it yet but freeze dried fruits may be the way to go?

                          lkrfletcher That is fantastic. I used to know some guys, they were a family (uncles, brothers, etc.), when we still lived in Texas a little over 20 years ago & they were not even interested in Texas hunting. They would go to Colorado every year, get an over the counter license & pack in for 10 days every year. They knew where to go & all public. They came back with one elk each just about every year & maybe a mule deer too sometimes. That was all the hunting they did & all they needed. Wonderful meat. They asked me to go with them a few times, but I was always working, still working. I always thought that was pretty good & would like to somehow try it some day. We have been out there on assignment, etc. a few times & it is real nice.

                            lkrfletcher I have been lucky enough to fill a MT elk tag once. The sucess rate for elk there is about 6% across the board so I can only guess what the sucess rate is for bulls. I shot a 4x5 raghorn. Elk is some of the best wild game table fare in the world. I had the whole thing made into steaks and burger. Awesome stuff!!! Sadly last year I had to return my tag because of having Covid and they refunded 90% of my tag money. This year I was unsuccessful in the draw. Hopefully I get a ND deer tag to add more meat to the freezer.

                              Chef I only use chicken thighs for this. Debone and leave skin on. Then I grind them and make italian sweet sausage mix for 5lbs . Then I use 1 Macintosh apple and 2 ajour pears pealed and diced. Add some cheese if you like and stuff. Great on the grill or fried.

As a WI native even my sister from AK will bring an extra suitcase that she will fill with sausage and cheese when she comes down to WI to visit. If we see a cheese store while out riding around in WI we’re stopping in. Must be a WI thing. LOL

                                        Bob Stehlik Up here in the UP pasties and potato sausage are made and sold by all kinds of organizations as fund raisers. Spotted Cow is my favorite from that brewery, though fat squirrel is pretty good too, usually grab a 6 pack before crossing back over the state line. I think it was a pretty good season for syrup, I got plenty of sap. I will turn 1 gallon into sugar another into candy the rest will get squirreled away and given away or used throughout the year.
