Spotted Cow is my favorite from that brewery, though fat squirrel is pretty good too, usually grab a 6 pack before crossing back over the state line. I think it was a pretty good season for syrup, I got plenty of sap. I will turn 1 gallon into sugar another into candy the rest will get squirreled away and given away or used throughout the year.

Debone and leave skin on. Then I grind them and make italian sweet sausage mix for 5lbs . Then I use 1 Macintosh apple and 2 ajour pears pealed and diced. Add some cheese if you like and stuff. Great on the grill or fried.

The sucess rate for elk there is about 6% across the board so I can only guess what the sucess rate is for bulls. I shot a 4x5 raghorn. Elk is some of the best wild game table fare in the world. I had the whole thing made into steaks and burger. Awesome stuff!!! Sadly last year I had to return my tag because of having Covid and they refunded 90% of my tag money. This year I was unsuccessful in the draw. Hopefully I get a ND deer tag to add more meat to the freezer.

I used to know some guys, they were a family (uncles, brothers, etc.), when we still lived in Texas a little over 20 years ago & they were not even interested in Texas hunting. They would go to Colorado every year, get an over the counter license & pack in for 10 days every year. They knew where to go & all public. They came back with one elk each just about every year & maybe a mule deer too sometimes. That was all the hunting they did & all they needed. Wonderful meat. They asked me to go with them a few times, but I was always working, still working. I always thought that was pretty good & would like to somehow try it some day. We have been out there on assignment, etc. a few times & it is real nice.

Fresh can work if you cook it immediately. I haven’t tried it yet but freeze dried fruits may be the way to go?

I do apply, but so do thousands of others. Like with all hunting, getting an animal would just be a bonus. I do alot of hunting here in Wi, but would like to see it out there. I scored 1 nice bull and 3 really big cows in those 30 years. Even being a Colorado resident, the price per pound is very high. Most of the good elk areas are by draw only and you’ve got to hit the elk at the right time as they move through. lkrfletcher seems to good to a pretty good area. You might contact him since he is still an active elk hunter. I also think Wisconsin is starting to open up elk on a limited basis. I still read the Milwaukee Journal-Sentinel on a daily basis.

Prime Choice Meats; the local butcher in Eagle River makes great blueberry brats, cranberry brats and wild rice brats. All three are delicious and the flavors all work well with the bratwurst. We always bring some back to Colorado with us. I’m a Wisconsin native and definitely agree with you that it is a Wisconsin Thing!
