These stuffers work fine for home processing, but they have a couple limitations. 1) Cast iron is strong but brittle. Don’t drop it on the floor or something will crack. 2) Keep it clean. Rinse in hot water, dry and oil immediately with food grade oil or it will rust. 3) Sometimes there will be meat blow by past the piston. I turned a tight fitting plastic disk to use under the cast iron piston to work as a seal. 4) If you are stuffing small diameter casing , you need the extended crank handle for extra leverage or it will kick your butt.

Yup, that blow back is why I decided to retire mine this year. I tried buying one of the plastic “gasket” discs from eBay but it didn’t really help. And it’s a bit tiring cleaning and oiling that heavy beast. Super cool though. Mine still has the original stuffing tube, fruit straining basket, and still has some original paint/trim.

processhead Can you go over what you did to restore that? Im gonna post a picture here in a minute of something I’ve been badly wanting to restore but haven’t really had the time to look into it. We used to have a sandblasting cabinet here but we got tired of fixing it for it to run for another 10 minutes!

This is an old old slicer that we have had at Walton’s for some time now. I stole it from our service department to use as a backdrop for something that ultimately never happened but I refuse to throw it away. It is a cool piece of history and I have been wanting to clean it up and show it off. Without a sandblaster does anyone have a good way to refinish it? Please don’t say elbow grease, I don’t have the time right now. I was thinking about taking some oven cleaner and spraying it and then let it sit in a plastic bag for a few days to get most of the rust off and then trying to coat it but I don’t feel like the coating will do it justice.

Jonathon Do you have a nearby high school that has a shop class or a community college? Often they will take on projects such as your slicer restoration. Might just cost a few links of sausage in return for their service.

Oven cleaner and bagging might be good for a first attempt on your slicer. Looks like that slicer has some plated surfaces?

I use electrolysis to clean up cast iron equipment. It gets the bulk of the rust, gunk, and old paint off. Usually still need to do a little hand work.

I am not sure how well that method would work on your slicer, though. Ideally you need to fully disassemble for a thorough cleaning. For something you are just going to display, disassembly might not be necessary.

Jonathon a vinegar bath and some scrubbing, works on cast iron. Chef has a pretty good idea. Or if there is a sandblasting company nearby.

Depending on the final look you want if it is plated be careful with a sand/bead blast

Blasting it is good if you are after a good base to repaint or replate. It will definitely change the original appearance. One of the things I like about electrolysis is that it leaves the original surface intact and only removes the rust and grunge.

Jonathon For God’s sake, do not discard that beautiful thing, if you think you want to ever, call me! Other than the 50/50 vinegar bath, rinse, & baking soda bath to neutralize, I am thinking keep it away from liquids as cast iron is porous. I would think a light blast or walnut shell blast would do it best (after dismantling & taking lots of step by step photos). I use a bench mounted wire wheel too for restoration of that type & it gives the best results, but it will be hard to get into all the crevasses at the exterior of that beautiful slicer. There is a guy in Pittsburg that I have used more recently for for blasting & powder coating projects that does good work for a fair price, even with shipping (compared to local). For the exterior finish I just want to say light oil & keep it dry. You could also consider powder coating the exterior non moving parts. Take the wood handle off first, clean with murphy oil soap, dry very well & soak in boiled linseed oil while you are working on the metal. I know we all can’t wait to see that thing when you finish.

I actually like it. Only seem to pick it up when there’s a sale. Usually comes as a freebie with the regular Guinness.

With Leinenkugel’s basically in my back yard I’ve never tried the Vanilla Porter. Toasted Bock… Oh yea! A lot of their stuff is very regional… It shouldn’t be! Great products!

Jonathon Been thinking about this all day. I think calldoctoday is right. Something like this needs to be preserved, not just spray painted. It is worth restoring. That will take expertise. Would be worth having a professional look at it.

Toasted shaved tenderloin sandwich, meat seasoned with Excalibur’s Butter Garlic Rub, bun was rubbed with garlic butter and toasted, meat was topped with swiss cheese and carmelized onions, with the top bun slathered with bacon aioli.

Tex_77 That’s a wonderful trip through the stables. I’m tasting your combo of seasonings and accoutrements virtually and the old mouth is watering. Very good choices.
